NUTR 6628 - Therapeutic Cooking


This course provides students the opportunity to smell, taste, and produce meals that meet the dietary restrictions of various therapeutic diets. Students will also learn how to alter recipes utilizing food substitutions and culinary techniques to meet a nutritional goal as well as assess this recipe utilizing all of their senses. Through this course students will develop the skills necessary to perform a cooking demonstration while discussing the health benefits of the food.  Laboratory fee. 4 credits.
