DIET 2251 - Lab DIET 2250 Prerequisite:DIET 1160 ; co-requisite:DIET 2250 . Students will learn to prepare food according to today's healthy eating goals. Food laboratory strategies covered will include basic culinary technique to enhance the flavor of food, recipe content modification to include natural sources of protein, fat, and carbohydrate in healthy meals, and snacks. Students will utilize the latest software to analyze the nutritional composition of recipes and design recipe or food demo projects. Students will discussion the pros and cons of organic, functional, and genetically engineered foods in the current food system and learn about sustainable food practices. Laboratory fee; 0 credits.
