NUTR 6604 - Vitamin and Mineral Metabolism and Biochemistry Prerequisite: NUTR 6620 . This course furthers the understanding of the biochemical processes of the body and focuses on the roles that vitamins and minerals play in them. This course provides students an in-depth comprehension of biochemical, physiological, and clinical aspects of vitamin and mineral metabolism. Food sources, factors influencing bioavailability, digestion, absorption, assessment status, drug interactions, clinical features of toxicity, and deficiency will be covered. 3 credits.
